Hi, my name is Trisha Lanning and today we're going to make Mediterranean Shrimp. I like to make this appetizer because everything goes in this resealable bag. First, I have a fourth of a cup of olive oil and this is like we're making actually a vinaigrette that everything is going to marinate in and will give it great flavor. I have the fourth of a cup of olive oil and I just put in three tablespoons of white wine vinegar.

And I have one teaspoon of lemon juice and I'm going to show you how to get the zest for the lemon peel.
This is called a "Micro-plane" and it's a great little tool that you just take your piece of fruit whether it's a lemon, or a lime, or an orange. Today, this is a lemon and...rub it in a circular motion on the "Micro-plane" and actually, the zest will come off. It will go into the back and um, you just don't want to go to down to the white, piffy part of the lemon. That gets bitter.

So, I have one teaspoon of lemon zest or lemon peel...and I have one tablespoon of fresh oregano that I snipped and you can snip it right in your bowl and two tablespoons of shallots, one clove of garlic minced, and half a teaspoon of salt.

Last, but not least, our capers. The capers are the bud of a shrub and they have a flavor that's kind of citrus-y, kind of um...like an olive.

So, we have made our vinaigrette and if you're running short on time, you could use one cup of a purchased Italian vinaigrette or a dried tomato vinaigrette.

For the cheese, we're going to use a combination today of provolone; it's a smoked provolone, and also feta cheese. You could use one or the other and this recipe calls for four ounces or about one cup. Put that right in the bag and then I have one pound of shrimp that is already cooked and frozen and thawed.

It's as easy as that and we'll put it in the fridge for two to six hours. I've removed the shrimp mixture from the resealable bag and put it into a bowl to make it easier to get into my glass. You can use any fun glasses that you have on hand and just spoon it in. It smells great! And this is one of those appetizers that could also be a salad cause it eats like a salad.

Since it's a great make-ahead recipe it makes your entertaining day less stressful.
