I mean the one that means "I don't think he is funny"
Doesn't 「彼は楽しいだと思わない」 mean this? Can you please explain the differences between them for me?

"I don't think he is funny"
彼はユーモアのある人だとは思わない。
私は、彼がおかしいと思いません。
These two are correct translations.
The wrong part of your translation is 「楽しいだと」.
The adjective "楽しい" can't be joined with "だ".
