I tink, the smell of old books come from recycled paper, Because all the processes used in the manufacture have chemicals, afther a certain time, this chemicals produce this smell of vainilla or stuff like that.
In another viewpoint the aroma a vainilla previals, as it is the natural component of the wood in the booksellers.

    In another viewpoint would be the aroma of vanilla continues to prevail, because it is a natural component of the wood in the bookshelves from the book stores.
