Hello everyone ! Today, I’m going to explain how to cook a delicious cheesecake !

Let’s begin with the ingredients. For this recipe, you will need : 200g digestive biscuits, 75g unsalted butter, 400g full-fat cream cheese, 300g  mascarpone, 200g  icing sugar and 1 teaspoon vanilla extract.

For the utensils, you will need freezer bags, a rolling pin, a saucepan, a loosed-bottom tin, mixing bowls, cling film and an electric mixer.

First, place the digestive biscuits into a freezer bag. Push all the air out and seal the bag. Crush the biscuits with a rolling pin. Be careful, don’t break any holes in the bag !

Then, melt the butter in a large saucepan. Tip the biscuit crumbs into the butter and mix well until thoroughly combined. Press the buttery crumbs into the bottom of a 23cm loose-bottomed tin. Chill in the refrigerator.

After, combine the cream cheese and mascarpone in a large mixing bowl. With an electric mixer, blend the cheeses together. Add the icing sugar, but be careful, don’t add it all at once ! Add a little at a time and blend. Finally, mix in the vanilla.

After, spread the cream cheese mixture over the biscuit base and smooth the top with a spatula. Cover with cling film and chill in the fridge for at least four hours.

Finally, when ready to serve, release the catch of the loose bottomed tin slowly. Don’t go too fast ! Then slice and serve. Enjoy !
