Like many Cajun and Creole recipes, jambalaya is a delicious mix of seasoned meats and vegetables.  Opinions differ on how to cook a proper jambalaya but everyone will agree, however, that this jambalaya recipe, which is ready in just an hour, is delicious and easy !

INGREDIENTS:
2 tablespoons olive oil
2 chicken breasts, cut into slices
1/2 pound sausage, thinly sliced
1 medium onion, chopped
2 large celery sticks, chopped
1 small bell pepper, chopped
2 cloves garlic, peeled and chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup tomatoes
2 cups rice
1 teaspoon hot sauce

DIRECTIONS:
1. Heat the oil in a large frying pan over medium-high heat. Cook the chicken for about 5 minutes. Reduce the heat to medium.
2. Stir in the sausage, onion, celery, bell pepper, and garlic. Add the salt and pepper, and stir again. Cook the mixture for 5 minutes, stirring occasionally.
3. Add the tomatoes and the uncooked rice. Then add some water. Bring the mixture to a boil.
4. Reduce the heat to low and cover the pan. Cook the jambalaya until the rice is tender, for about 20 minutes. Add the hot sauce.

4- Native Americans today
The American government tried to make Indians learn the ways of the white people, wear their clothes, speak their language and adopt their religion. Indians became citizens of the United States in 1924 but living conditions on the reservations were still very hard. Since the 1970’s, the American Indian Movement has been trying to improve things. In 1972, thousands of Native Americans travelled to Washington in a protest march called “The trail of Broken Treaties”. Since 1975 Indian school children have been able to learn about their own history and culture. However, today nearly a quarter of Indian families still live in poverty. Many of them feel they are caught between two cultures. They can no longer live as their ancestors used to, but they don’t feel part of modern America.

3- The battle for survival
Treaties were signed which promised land to the Indians “as long as the grass will grow”, but the government did not respect the treaties and war broke out. The Indian wars, between the US army and the Great Plains tribes, lasted from 1860 to 1880 but soon the Sioux were too weak to fight. Without buffaloes, they had nothing to eat. Forced to live a sedentary life on the reservations, they turned to their religion. They believed that a special dance – the Ghost Dance – would make the buffaloes return and the white men leave. The dances were peaceful but made the white population nervous. In 1890 a group of about 200 Indians, men, women and children, were massacred by soldiers at Wounded Knee. It was the end of Indian resistance.

2- The Whites take possession
Over the next 200 years, white people gradually moved west, taking land from the Indian tribes and forcing them to move from their environment. They killed the buffalo, brought guns and diseases. In 1830, the Indian Removal Act made all the tribes living east of the Mississippi move west to an isolated region called “Indian territory”. At that time, the Cherokee tribes were already highly civilized. They had a written language and their own newspaper. They lived in brick houses and sent their children to white schools; but this didn’t save them. In 1838, American soldiers forced thousands of Cherokees to leave their homes in Georgia and march hundreds of miles to the west. The journey – “the trail of tears” – took nearly five months and 4,000 Cherokees (a quarter of the whole Cherokee nation) died.

Native Americans, a lost culture?
The first Americans
When Europeans started to settle on the east coast of America at the beginning of the 17th century, there were already over a million Native Americans living on the continent in over 600 tribes.
The tribes had very different ways of life depending on where they lived. For example, in Mexico, the peaceful Pueblo tribes lived in villages and were America’s first farmers. Their neighbours, the Apaches, were nomadic hunters and warriors, and moved across the deserts and mountains of the region which is now called Texas. The Iroquois were a group of tribes – a “nation” – that lived in the forests of north-east America. They lived in permanent villages and were skilful hunters and fishermen, using canoes to carry them along the rivers and lakes. Another famous nation – the Sioux – lived on the vast plains of grass between the Mississippi River and the Rocky Mountains. They depended on buffalo for food, shelter and clothes and followed them across the plains, taking their tents, or “tepees” with them. Like the Apaches, they too were warriors and often used to fight and steal from other tribes.

Glee is another name given to the choir clubs in American school. In the series the song became the symbol of the club.

They chose this song because it has a positive message. It is about the improbable meeting of a boy and a girl who seem to be opposite people.
The main message is believing in yourself and your dreams, even when it seems impossible.
